Street Fighter 2 Zero Taikenban normally lets you play Arcade and Versus mode, but the disc has data for more than just those modes. This patch enables access to them.
The demo was built on 1996-07-25, making it a few weeks older than the final game (1996-08-18) and also the available prototype (1996-08-06). It's got several differences, notably with the game menus.
